It all depends on how advanced you want the robot to be, or on what you want to robot to do. You could build a simple robot in about one hour (for example, the robot could use simple sensors to navigate a track), or it can take months or even years. For example, when Honda built Asimo, they spent 7 years on a project to perfect the walking of the robot and they had 4 prototypes before the final version of the robot.
